Victoria Day BBQ Healthy Eating Survival Tips & Low Carb Taco Recipe

Victoria Day is right around the corner. That means there is going to be a whole lot of barbecuing and whole of beer. For those of you seeking the higher path to nutrition you will be deep in the danger zone. Abbey saves the day again with these great, easy to follow, survival tips for your next Victoria Day BBQ. The first tip Abbey’s got to help you navigate the BBQ Potluck this weekend is to have a snack before you go. Arriving to the BBQ in hungry, angry, state is recipe for disaster. You’ll be gobbling down sliders and slamming beers before you even know what happened. Abbey recommends a snack with Fiber, Protein, and Healthy Fats. This will keep you feeling fuller, longer. Tip two is an easy one. Instead of reaching for that greasy burger load up on the fresh vegetable salads, and try to take it easy on things like potato salads, pasta salad, and even bean salad. Also avoid, at all costs, the jello salad. It may look tempting, possibly even delicious, but it is loaded with everything you want to avoid. Tip three is to fill up on lean protein. Lean protein is special, it keeps you fuller for longer periods of time. That leads to you being less tempted by those decadent looking nachos, the ice cream Sundays, and that mouthwatering cheesecake. Stick with skinless, boneless, chicken breast, beef tenderloin, pork tenderloin, and even fish and seafood. If none of those are an option, just peel the skin right off your chicken, you’ll be saving yourself a lot of unnecessary calories with that one little trick. Tip four is to sip slow. Don’t overdue it on the fun juice. Take your time, that drink isn’t going anywhere. When you over indulge you are far more likely to make questionable decisions. Abbey recommends having a cup or two of water in between each serving of alcohol. If you are more inclined towards beer, consider going halfsies with your friends and take it on a can by can basis. If wine is your drink of choice, try a spritzer instead. It’s half wine and half sparkling water. If you’re more on the hardcore side of life and only liquor will do try pouring a half ounce over ice and take your time with it. Tip 5 is to bring along a lightened up dish that everyone can enjoy. One of Abbey’s favorite recipes is for low carb chicken tacos with pineapple avocado salsa. This recipe calls for skinless, boneless, chicken breasts and it’s success in the use of the recipe requires that you choose only the best chicken. That means chicken without added hormones, antibiotics, or animal by-products. For that very reason Abbey buys Liberterre chicken. These tacos are naturally gluten free and could easily be made dairy free as well by simply omitting the cheese at the end. To make these tacos start by putting your skinless, boneless chicken breasts inside a plastic bag that you can reseal. You will now use your food processor to create your marinade. Add cumin, olive oil, cilantro, lime juice, chipotle and adobo sauce, lime zest, and finally a pinch of salt and pepper. Puree that until it gets nice and smooth. Now transfer it into the bag with your chicken and mix it evenly then put it in the fridge for 2-3 hours. Your next step will be to grill your chicken. Abbey cleans off her grill beforehand and oils it lightly, the pre-heats it to about 375 ‘F. She cuts up some pineapple rings and puts them directly on the grill cooking them until they get nice and golden on both sides. Now it’s time to add your chicken. Abbey always cooks her chicken on direct heat first so it gets a nice caramelized crust then transfers it to indirect heat for the final cooking process. She cooks it until it reaches 165 ‘internally. When that’s cooked let it rest for about 5 minutes and then cut it into strips. Now we will make the salsa. Take the grilled pineapple and cut it into chunks then mix it in with some avocado, red onion, jalapeno, cilantro, lime juice, honey, and some salt and peper to taste. Mix that all together thoroughly. You have everything you need now to create these delicious tacos so let’s put them together. Simply follow along with the video and you will see they are constructed exactly like a regular taco but on lettuce instead of a crunchy shell.
